Wazwan

The great multi-course feast of Kashmiri celebrations.

Wazwan is cooked by a waza, a master chef, and his team, often through the night over wood fires. Guests sit in groups of four and share from a large copper plate called a trami, as dish after dish arrives, most of them made from mutton.

Facts

  • Rista, rogan josh and tabak maaz are among its best-known dishes.
  • Gushtaba, meatballs in a yoghurt gravy, is traditionally the last dish served.
